BAKED APPLES W/ WALNUTS AND BRANDY CREAM

Ingredients:

6 large apples
1 cup chopped walnuts
½ cup golden raisins
½ cup melted butter
½ cup brown sugar
¼ cup flour
1 tsp cinnamon

Instructions:

Scoop out the inside of the apples and place on a baking sheet. Mix together walnuts, raisins, butter, sugar, flour & cinnamon. Fill each apple with walnut mixture. Bake @ 350 degrees for 30 minutes or until apples are soft. Top with Brandy Cream.

Brandy Cream: 1 cup whipping cream**3 Tbsp brown sugar**2 Tbsp Brandy** Mix ingredients together with an electric mixer or whisk, until fluffy.

EGGS BAKED IN TOMATOES

Ingredients:

6 large tomatoes
5 whole eggs
1 cup parmesan cheese
½ cup ricotta cheese
½ cup milk
1 small can tomato paste
1 cup whole cream
1 tsp salt
2 Tbsp chopped chives

Instructions:

Remove the inside of the tomatoes. Sprinkle with salt and let drain on paper towel for 20 minutes. Meanwhile, beat together eggs, chives, ricotta cheese and milk. Place tomatoes on a baking sheet and sprinkle the inside with the parmesan cheese. Fill each tomato with egg mixture. Mix together cream and tomato paste, top each tomato with about a Tbsp of this mixture and sprinkle with parmesan cheese. Bake @ 400 degrees for approx. 20-30 minutes or until eggs are set.

Yield:
Serves 6

Variation: add sautéed vegetables to the egg mixture

SPINACH RICOTTA PUFFS

Ingredients:

1 Tbsp butter
1 sheet frozen puff pastry dough
4 cups raw spinach
1 Tbsp minced garlic
2-3 roma tomatoes – sliced
¼ cup olive oil
½ cup parmesan cheese
1 cup ricotta cheese
2 tsp fresh chopped thyme

Instructions:

Cut pastry dough into twelve equal portions and place on baking sheet. Sauté garlic in butter for 2 minutes, add spinach and cook until soft. Spread approx a Tbsp of ricotta on each pastry piece, then layer with the following: spinach, tomato slice and parmesan cheese. Sprinkle puffs with olive oil and thyme. Bake @ 400 degrees for 20-25 minutes or until pastry puffs & cheese turn golden brown.

Serves 12

BANANA-BLUEBERRY MUFFINS

Ingredients:

3 cups all purpose flour
1 Tbsp baking powder
1 tsp baking soda
1 tsp kosher salt
½ pound soft butter
1 cup brown sugar
7 eggs
1 Tbsp vanilla
6 bananas
3 pints blueberries

Instructions:

In a large bowl, add flour, baking powder, baking soda, and salt in a bowl and stir until blended. In an electric mixer bowl, cream together butter and sugar, then add eggs one at a time. Add vanilla. Stir egg mixture into bowl with flour and moisten thoroughly. Make sure flour ingredients are well blended into mixture…no white specks. Add fruit ingredients and mix lightly. Bake at 400 degrees until clean with a toothpick about 20 minutes.

Yield: 2 dozen
